Dry aged steak in Cascais, on the charcoal grill
Latina Grill has a whole Dry Aged Meats section on its menu: six cuts cooked over charcoal on an open grill in the dining room, on Estrada da Malveira da Serra in Cascais.
Dry aging means resting beef uncut, in controlled cold, for weeks. Some of the water evaporates and the meat’s own enzymes tenderise the fibres, so the flavour gets deeper and the texture softer than the same cut fresh.
Dry aged cuts on the menu
- Rubia Gallega Gold chuletón — the Galician breed, with yellowish fat and a deep flavour.
- Iberian Wagyu chuletón.
- Australian Wagyu tomahawk.
- Australian tomahawk aged in cognac and Madeira.
- T-bone — strip and tenderloin on the same bone.
- USA rib eye, 250 g.
To share: the Dry Aged Board
To try more than one dry aged cut in the same meal, order the Dry Aged Board to share. The boards section also has the Latina Premium Board and a Surf and Turf Board with seafood.
Big bone-in cuts like the chuletón, the tomahawk and the T-bone work well for two or more, with sides such as truffled mashed potatoes or vegetables grilled over the embers.
How to order it
Well-marbled dry aged cuts like the chuletón and the rib eye are at their best from medium rare to medium: the fat renders and the aged flavour stays. On big cuts the ends cook more than the centre, which helps when a table likes different doneness. See our steak doneness guide for every level.
