Wagyu in Cascais, on the charcoal grill
Wagyu has its own place on the Latina Grill menu in Cascais: from Japanese Kobe A5 to an Australian Wagyu tomahawk, with Japanese, Australian and Iberian Wagyu cooked over charcoal on an open grill.
Wagyu is the name of the Japanese cattle breeds known for marbling — fine fat running through the meat that melts on the grill and makes it very tender and rich. Kobe is Wagyu from Hyogo, Japan, and A5 is the top grade of the Japanese system.
Wagyu on the menu
- Japanese Kobe A5 — 150 g steak with truffled potatoes and grilled vegetables (chef’s suggestion).
- Japanese Kobe tataki, 100 g — starter.
- Japanese Wagyu rib eye, 250 g.
- Golden Japanese Wagyu rib eye, 300 g — Golden Selection.
- Australian Wagyu tomahawk — among the dry aged meats — and the Golden Australian Wagyu tomahawk.
- Iberian Wagyu chuletón and a 1 kg Premium Wagyu chuletón.
- Wagyu trio with homemade pickle and truffled ponzu.
Japanese, Australian or Iberian?
Japanese Wagyu, and Kobe A5 above all, has the most intense marbling: it is very rich and eaten in small portions, which is why the Kobe comes as a 150 g steak. Australian Wagyu is raised in Australia, often from crosses with Wagyu genetics; it usually has less marbling and suits big cuts like the tomahawk. Iberian Wagyu is raised in the Iberian Peninsula and appears on the menu as a chuletón.
First time? Order a Wagyu cut to share and compare it at the same table with a regular rib eye, or try the Wagyu trio for small tastes.
